summer cooking recipe #1

Usually the summer months I'm not a huge fan of cooking. It's too hot, we are too tired and I'm just not that into it. This year though is different because I'm in my new glorious kitchen and doesn't a gorgeous kitchen just make cooking better ??!!

One of my fav go to dinners is The Oven Omelette. This is not only a great summer dish because it's super easy, yummy and light but just take out the sausage and it's a great veggie dish for Fridays during Lent.
 
I will preface this though by saying there is no way in the world my kids would ever eat this. However, there are times Cam and I want something different then the norm so I am always down with cooking something seperate for them. I just popped some fish sticks in the oven, cooked some mac and cheese and set aside some of the steamed broccoli and voila! Easy dinner for them and yummy dinner for us :)
 
So back to the omelette...I find most of the things I cook on Pinterest. Honestly I find everything on Pinterest ;) Decorating ideas for the house, party ideas, crafts...pretty much everything! So when I stumbled upon this recipe I couldn't wait to try it!
 

Oven Omelette with Sweet Potato Crust

Lightly grease a pie dishes. Thinly slice one large sweet potato, and arrange it around the bottom of the pie dishes. Sprinkle the sweet potato crust with sea salt and pepper. Pour omelet mixture over top.

Omelette mixture

6 whisked eggs
 1 finely chopped sauteed onion
1 finely chopped sauteed red pepper
2 cloves minced sauteed garlic
2 cups lightly steamed, thinly sliced broccoli
1 cup sliced Applegate Farms, Chicken & Apple Sausage*
1/2 cup shredded cheese

Bake at 350 for about 40 minutes.

*I like Applegate Farms, Chicken & Apple Sausage because it’s gluten and casein free and it doesn’t contain MSG or nitrates. Plus the chickens are without antibiotics.

 
 
 
 
I served a salad along side and Cam and I devoured it!
